Caramel Apple Cupcakes

Ingredients:

1/2 cup softened butter

3/4 cup sugar

2 eggs

1 1/2 cups flour

1/2 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

2/3 cup milk

1/2 diced apple

1 1/2 tsp cinnamon

Directions:

Preheat oven to 350 F

In a bowl cream butter and sugar until light and fluffy.

Beat in eggs one at a time.  Add vanilla.

In a separate bowl whisk together the flour, baking powder, baking soda, cinnamon, and salt.

Add flour mixture to the butter mixture in two additions, adding the milk inbetween the additions.

Stir in the apples.

Scoop batter into a greased muffin tin and bake for 15-20 minutes.  10-15 minutes for mini muffins.

Assembly:

Once everything has cooled remove the centre of each cupcake. Fill with caramel, frost, and drizzle with a little extra caramel.
